Easy Ayurvedic Carrot Ginger SoupOriginal recipe from Ayurvedic Yogi
Ingredients needed are 2 or 3 medium-sized carrots, 1 large onion, 2 potatoes, a large bunch of coriander, a pinch of black pepper, 700 mL of vegetable stock, and an inch of fresh ginger root.
Finely chop all the vegetables. Lightly sauté the onion in ghee, adding the vegetables and ginger. Fry for a few minutes, then add pepper and half of the coriander. Cover with stock and simmer till vegetables are soft.
Place in a blender and purée, then, return to the pot, adding more stock if the consistency is too thick. Add the rest of the coriander before serving. For a more substantial meal, cook red lentils separately in the stock and add them to the finished soup before serving. Makes 6 servings.
